Sunday: Egg & Cheese Waffle Sandwich
So simple! Make your own waffle at home (click here for a simple waffle recipe) or look for 100% whole wheat in the grocery store. I substituted apple sauce for vegetable oil in the recipe and added a couple of slice of ham to the sandwich to increase protein!
Monday: Tuscan Chicken with Lemon Parmesan Crusted Brussels Sprouts
If you haven’t already noticed, we like Brussels sprouts in our family! This Tuscan chicken recipe can be a meal all by itself but I made it this time by removing the kale and adding the green vegetable (brussels sprouts) on the side. Tuesday: Baked Salmon with Parmesan Herb Crust
This recipe is yummy!! I’m always looking for more seafood recipes to add to the blog! Seafood is not only good for you but also can be a fairly quick meal to fix. Serving size: 4-5 ounce salmon, 1/2 cup starch and vegetable on the side
Wednesday: Spinach Hummus Pepper Wrap
A recipe for a night of the week on the go! This wrap requires no cooking..unless you add chicken for protein to it like I do!

Thursday: Grilled Striped Bass with Chunky Mango Ginger Sauce
Striped Bass is not a common fish found in the grocery store so substitute any white fish…tilapia, trout, flounder, mahi-mahi, or grouper. Thank you to my neighbor whose mango tree will be much appreciated in this sauce! The sauce recipe makes a lot so make only what you need! Serving size: 5-6 ounce fish with 2 Tbsp sauce
Friday: Hawaiian Chicken with Pineapple salsa and Cilantro Rice
I cheat a little bit and use teriyaki sauce instead of making the sauce in this recipe. It speeds up the process and is much less of a mess! Serving size: 4 ounce chicken, 1/2 cup rice
Saturday: Spicy Guacamole Burger
We also love burgers in our house and this burger did the trick! I simplified the guacamole recipe to our preference and also used ground turkey instead of ground beef. Look for 100% whole wheat hamburger buns! I highly encourage trying this one!! Serving size: 4 ounce burger with 3 Tbsp guacamole
