Monday: Brown Sugar-Grilled Salmon with Zucchini and Fennel “Noodles”
New vegetable to try for the week is fennel! Fennel is an aromatic plant in the parsley family. The bulb is the vegetable part of the plant. I think fennel tastes very similar to liquorice but in a good way! I encourage you to try it but you can always substitute other vegetables if you prefer. The zucchini and fennel are served raw in this recipe…I plan to saute them for 1-2 minutes and serve.

Tuesday: Grilled Chicken with Barley Corn Salad
Shortcuts for this recipe… use a pre-made vinaigrette dressing and can of corn (rinse first) if you don’t have time to shuck and clean fresh corn ears.
Wednesday: Tomato-Ricotta Pizza
Lasagna meets pizza! I plan to incorporate a small amount of marinara sauce and additional vegetables onto this pizza!
Thursday: Greek Chicken Nachos
If you’re short on time, use tortilla chips instead of making your own pita chips.

Friday: Egg-Topped Quinoa Bowl with Kale
I love “bowl” recipes. Throw everything in a bowl and serve! I plan to add a protein source to this recipe. Other substitutions.. turkey bacon for pancetta and spinach for kale.
