Chicken-Tortilla Pie  Tuesday: Chicken Tortilla Pie

This recipe serves 4 people but for smaller families, you could use 6 inch corn tortillas and each get 1/2 of the pie. Food from a can is usually very high in sodium so read the labels! Always rinse beans and other vegetables from a can if you have to use them. You could also make your own black bean spread using only black beans. I plan to add a couple of slices of avocado and a dollop of low-fat sour cream to the top!

Grilled Chicken with Rustic Mustard Cream  Wednesday: Grilled Chicken with Rustic Mustard Cream

Chicken can get old after while so I’m also looking for new ways to spruce it up! This tangy cream sauce does the trick! Fat free plain Greek yogurt is a great substitute for mayonnaise in almost any dish! Add a portion of non-starchy vegetables to the side of this grilled chicken to complete the meal! Serving size: 4 ounces chicken, 1 cup mixed vegetables

Bobby’s Lighter Shrimp and Grits  Thursday: Buffalo Shrimp & Grits

Grits…a southern staple! My husband and I love shrimp & grits! This recipe by Bobby Deen (one of Paula Deen’s son) makes this lighter version that I like to play off of. As mentioned before, my husband loves buffalo sauce, any buffalo. So I plan to toss the shrimp in buffalo sauce before serving. Substitutions I make to this recipe: turkey bacon for Canadian bacon and stone ground grits for quick-cooking grits. Serving size: 1/2 cup grits with 1 cup shrimp mixture

Pork Chops with Roasted Apples and Onions  Friday: Pork Chop with Roasted Apples

I love the combination of pork and apples. Pork tenderloin is the leaner part of the pig so I plan to use it instead of pork chop. Gala, McIntosh, and Granny Smith are great cooking apples.  Add a portion of non-starchy vegetables to this recipe to complete the dish!

Groceries: chicken, shrimp, pork, fat-free hat & half, tomato, bell pepper, 2 other side vegetables, apples, onions, can of black beans, Dijon mustard (if you don’t already have it in your fridge), dry white wine
