  Monday: Sheet Pan Low Country Boil

This a classic Southern tailgating meal! But it doesn’t have to be served just at the tailgate! And prepared on just a sheet pan… easy-peasy! If you made the roasted potato corn salad last week, you may have left over corn on the cob and red potatoes to use which would be perfect for this meal. Old Bay Seasoning is crucial! It can be used in many other seafood dishes too. This dish is missing a green vegetable but fresh parsley can count for this meal.. right?! Serving size: 2 cups country boil

Sweet Potato Noodles with Chorizo, Roasted Red Pepper, and Spinach | Get Inspired Everyday!  Tuesday: Thai Turkey Sweet Potato Noodle 

I’m going out on a limb here…the hubby isn’t a sweet potato fan but I’m hoping the Thai sauce and other ingredients will hide it! I definitely do not want to add a meal to the “don’t make this again” list. For this meal, I’m combining the two recipes below and then putting my spin on them! I plan to use the Thai sauce (soy sauce, peanut butter, lime juice, ginger, honey, Sriracha/hot sauce) from the first recipe with the ingredients in the second (spinach, red pepper). I also plan to substitute lean ground turkey for chorizo (spicy Spanish pork sausage). Serving size: 1 to 1 1/2 cups of sweet potato noodle mixture

As I’ve mentioned before, my husband loves BBQ. He puts it on just about everything…well not everything but a lot of things. And this is my quick meal night so this recipe works great! Whole wheat tortillas are recommended over white. Try cooking the chicken with cooking spray instead of olive oil. I also plan to substitute a spicy cheese like pepper jack or Monterrey jack instead of mozzarella and raw spinch for romaine lettuce. Serving size: 4 ounces chicken inside one wrap

Tuna Poke Bowls with Brown Rice and Kale  Thursday: Tuna Poke Bowl

I love finding new ways to prepare ahi tuna and this is simple one dish meal. Ahi tuna can be seared if you do not like it prepared raw. Lacinato kale is not easy to find so spinach or regular kale are great substitutions. Serving size: 1 cup tuna mixture, 1/2 to 3/4 cup rice

Lemony Chicken Kebabs with Tomato-Parsley Salad  Friday: Lemony Chicken Kebabs with Tomato-Parsley Salad

This is one of those recipes where the picture sold it! I find many recipes that way. Fire up the grill for these kebabs or use a stove top grill pan. Add a small serving of carbohydrate to complete the meal. Serving size: 1 cup chicken (2 kebabs) and 3/4 cup tomato salad

Groceries: chicken,  shrimp, andouille sausage, ahi tuna, turkey or chorizo, fresh parsley, ginger, corn on the cob, red pepper, red potatoes, sweet potatos, cilantro, lemons, cucumber, avocado, raw spinach (or kale), sriracha or hot sauce, pineapple, whole wheat wraps, shredded cheese (monterry jack, mozzerella, or pepperjack),

  1. Hi Mere,
    We loved the low country boil last night. Only difference was I wrapped it in tin foil packets and finished it on the grill instead of the oven.
    All recipes look great this week. Going to try the sweet potatoe noodles if I can get the spiralizer this week.
    Hope you guys are out of the rain!
