Grilled Salmon with an Orzo and fresh Corn Salad  Monday: Grilled Cedar Plank Salmon with Orzo Salad

For this recipe, the salmon can be cooked stove top or on the grill. I found cedar plank salmon last week on sale at my favorite grocery store Aldi, so we are going to cook the salmon on the grill for this meal. If you aren’t a fan of seafood, chicken or beef would go great as well along side the orzo salad. The only changes I plan to make are reduce the amount of oil and salt and remove the red onion (we aren’t fans of onions). Serving size: 4-5 ounces salmon with 1 cup orzo salad

The tacos in this recipe are made with flank steak but I plan to use chicken breasts instead. I almost always make guacamole when we have Mexican food so I will likely put a scoop of guacamole on the side to eat by itself or put inside the tacos. Serving size: 2 tacos

      Wednesday: Buffalo Chicken Lettuce Wraps with Cauliflower Chowder

I know what you’re thinking, soup in the summer? Although cauliflower is not yet in its peak season, it can still be found in most grocery stores this time of year. I haven’t made either of these recipes so I’m looking forward to this meal! Cauliflower has gained interest lately in its ability mimic rice and be made into pizza crust. Cauliflower is very low-calorie and contains around 30 calories per cup! Substitutions I plan to make for the chowder: turkey bacon instead of pork bacon, skim milk for 2%, and 1 Tbsp of butter/margarine instead of 2. For the buffalo wraps, I plan to use romaine lettuce instead of iceberg and will substitute cooking spray for oil and butter. Serving size: 2 lettuce wrap with 1/4 cup of chicken mixture in each with 1 cup chowder

Cobb Pizza  Thursday: Cobb Pizza

The classic cobb salad is transformed into a pizza in this recipe. Make your own whole wheat pizza crust if you have time or use naan bread instead! I plan to use turkey bacon in this recipe and will leave off the oil and mayonnaise and substitute the same amount of plain Greek yogurt instead. Serving size: 2 slices

   Friday: Turkey Sliders with Crunchy Green Apple Slaw

This recipe can be made into sliders or regular size burgers. Sliders are great for a crowd, for ease,  I plan to make regular size burgers. I will substitute plain non-fat Greek yogurt of the mayonnaise in this recipe. Serving size: 1 burger with 4-5 ounce patty (2-3 ounce patty per bun if making sliders)
