Chicken Enchiladas Recipe  Monday: Chicken Enchiladas

A tasty Mexican dish with its own homemade enchilada sauce! Like any recipe, use what you like and leave out what you don’t like or don’t have. One substitute you could make is green bell pepper for poblano pepper. I also plan to reduce the amount of cheese used and just light dust the top of the enchiladas with cheese. Serving size: 2 enchiladas

   Tuesday: Creole Shrimp and Creamed Corn

This is a new recipe I found in the latest issue of Cooking Light magazine and is a fun twist on my favorite shrimp & grits! Optional substitutions: non-fat milk for 1% milk and any type of tomato for grape tomatoes. Serving size: 1 cup corn mixture with 1/2 to 3/4 cup shrimp mixture

   Wednesday: Pan-Grilled Chicken with Peach Salsa

As I’ve mentioned before, we eat a lot of chicken and I’m always looking for new ways to spruce up the good ole chicken breast! Since peaches are in season, this is great way to incorporate them into a dinner meal. Optional substitutions: red bell pepper for fresno chile (if you want less spice), fresh cilantro for mint, and lime juice for lemon juice. Serving size: 4-5 ounces chicken with 1/2 cup peach relish

   Thursday: Shrimp Lo Mein

This is another new recipe I have saved but haven’t made yet! This is a make it yourself healthy version of the classic Chinese take out meal. I plan to make this one as is! Serving size: 1 1/4 cup

prok.png  Friday: Pulled Pork & Peaches Biscuit Slider

So this recipe doesn’t have a link or ingredient list but I have a picture! I found this on a menu of a small restaurant in South Carolina called Juniper. Their description was “smoked pork shoulder slider, buttermilk biscuit, smoked peach butter, pickled peaches.” I will have to modify all the “smoked” part but it’s worth a shot!

    The tomato recipes were terrific! Thanks so much. We were able to use up a lot in the recipes and I also put some in the freezer and made sauce and juice out of others.
    This weeks meal plan looks good. I’m going to start with the corn and shrimp since we have some fresh corn. I’ll let you know how it goes.
