Happy New Year! I hope everyone had a wonderful Christmas and New Years! Make it a goal this year to make a meal plan each week to help you make better food decisions! Here’s a look at my family’s menu for next week. Hope you enjoy!

Baked Creamy Chicken Taquitos - one of my favorite go-to Mexican appetizers or meal. the-girl-who-ate-everything.com  Monday: Chicken Taquitos

This is one of my husband’s favorites! Greek yogurt is a great substitute for cream cheese and any type of shredded cheese can be used instead of pepperjack. I usually have a can of Rotel in the pantry so I make this recipe with it most of the time instead of using green salsa. Serving size: 2-3 taquitoes

This is a new recipe I came across recently…a quick seafood pasta dish. We are not huge fans of garlic so I plan to make this recipe with white wine and lemon juice instead. Add other vegetables you have on hand if you desire and use any type of pasta in your pantry if you do not have fettuccine, preferably whole wheat pasta! Serving size: 1 cup pasta with side salad or vegetable on side

  Wednesday: Crispy Chicken Florentine Melt

I enjoy watching The Pioneer Woman on Food Network because most of her recipes are very practical, involve few ingredients, and are simple to make. I do however use various substitutions in her recipes to reduce calories and improve the nutrition of a dish. This is a new recipe I found on her website. I plan to use cooking spray instead of butter and oil to brown the chicken but everything else use as stated! Serving size: 5-6 ounces chicken breast topped with 3/4 cup vegetables

Kung Pao Chicken Zoodles For Two without the guilt (under 300 calories), because I replaced the noodles with zoodles (zucchini noodles) and the results were fantastic!!  Thursday: Kung Pao Chicken Zoodles

Zucchini is eaten fairly frequently in our house and I always seem to have extra ones in the fridge that need to be used up other than in a simple stir fry. This recipe is great for just that! The only substitute I plan to make is used crushed red pepper for the chili paste since that is not a common item in my food pantry. Serving size: 1 1/2 to 2 cups

I’ve posted this recipe in the past but it’s a simple way to spruce up salmon with ingredients you probably already have in your pantry: parmesan cheese, parsley, and garlic. Serving size: 4-5 ounces salmon with vegetable on the side
