Baked Green Bean Fries  Tuesday: Broiled Salmon with Pepper Relish & Baked Green Bean Fries

This meal was inspired by recent episodes of Trisha’s Southern Kitchen and Guy’s Grocery Games. I am topping salmon with the pepper relish recipe below (minus the cream cheese). Bake or broil the salmon depending on your preference. A sweet friend of mine gave me some green beans from her garden that will be perfect for these fries! Serving size: 4-5 ounces of salmon with a handful of green bean fries

Fajita Panzanella Salad  Wednesday: Steak Fajita Panzanella Salad

This is a recipe for a quick night meal! Possible substitutions: whole wheat bread for sourdough, regular multi colored bell peppers for mini ones, raw spinach or spring mix for arugula. Serving size: 1 1/2 cups

Chicken Paella  Thursday: Chicken Paella 

I found this recipe from the latest edition of Cooking Light Magazine. This will be my first attempt at paella. Any type of rice can be used (I plan to use basmati brown rice). I also plan to leave out saffron that I do not have on hand on a regular basis. Any cut of chicken could also be used (breast, thigh, or tenderloin). Serving size: 1 chicken thigh (or 4 ounce breast) and 1/2 to 3/4 cup rice mixture

Turkey Carne Molida  Friday: Turkey Carne Molida

This recipe is also from the March edition of Cooking Light Magazine. I plan to leave out one of the spices (achiote) because it’s not something I regularly cook with. (I do this in many of the recipes I find online->leave out what I do not have!) I could see this being good with ground beef or chicken as well instead of ground turkey. Serving size: 2 corn tortillas
