I love making soup this time of year (even though it’s still 80 degrees here in Florida). This is a new recipe I came across on Pinterest. I plan to use lean ground beef instead of Italian sausage and add spinach to the soup. Serving size: 2 cups

Creole Shrimp and Creamed Corn  Thursday: Creole Shrimp Creamed Corn

I love the picture on this shrimp and grits-like recipe! Corn is not in season this time of year so canned corn is a great option. I always recommend rinsing vegetables in a can. Rinsing does not completely remove all the salt from the vegetables but it removes some. Serving size: 1 cup corn mixture and 1/2 cup shrimp mixture

Banh Mi Burgers  Friday: Banh Mi Burger

This is a favorite burger of ours. The only change I plan to make is use Greek yogurt instead of mayonnaise for the sauce. Serving size: 4 ounce burger
