Weekly Meals

Week of 12/3 – 12/7

Lasagna Soup with cheesy yum from afarmgirlsdabbles.com - This Lasagna Soup is truly like lasagna in a bowl. It's packed with the familiar flavors of lasagna, with an ooey gooey cheesy concoction that gets stirred in right before eating. Total cheesy YUM!  Monday: Lasagna Soup

I love making soup this time of year (even though it’s still 80 degrees here in Florida). This is a new recipe I came across on Pinterest. I plan to use lean ground beef instead of Italian sausage and add spinach to the soup. Serving size: 2 cups

These EASY shrimp stacks will satisfy your sushi craving, and they taste SO GOOD! Layered with cucumber, avocado, shrimp and brown rice, then topped with a spicy mayo – YUM! Tuesday: Spicy Seared Tuna Tower

I’ve posted this recipe in the past but this time I am making it using ahi tuna and drizzling it with a spicy sauce I plan to concoct using sriracha, honey, oyster sauce, lime juice, and sesame oil. Serving size: 1 “roll” (using 1 cup measuring cup)

Buffalo Chicken Tacos  Wednesday: Buffalo Chicken Tacos

This is a recipe for that night of the week when you need a quick meal! To make this meal even quicker, use bottled buffalo sauce instead of making it according to the recipe. Serving size: 2 tacos with 2 ounce chicken per taco

Creole Shrimp and Creamed Corn  Thursday: Creole Shrimp Creamed Corn

I love the picture on this shrimp and grits-like recipe! Corn is not in season this time of year so canned corn is a great option. I always recommend rinsing vegetables in a can. Rinsing does not completely remove all the salt from the vegetables but it removes some. Serving size: 1 cup corn mixture and 1/2 cup shrimp mixture

Banh Mi Burgers  Friday: Banh Mi Burger

This is a favorite burger of ours. The only change I plan to make is use Greek yogurt instead of mayonnaise for the sauce. Serving size: 4 ounce burger
