Greek yogurt could be a great substitute for mayonnaise in this recipe. Another vegetable or tortilla chips would be a great side item for this recipe! Serving size: 1 half pepper

Hearty Chicken-Vegetable Soup  Wednesday: Hearty Chicken Soup with Mini Biscuits

I’ve made these mini biscuits before with Greek yogurt instead of sour cream and they turned out just as good with the benefit of added protein! (If you haven’t noticed, I love using Greek yogurt as a healthier substitute). Serving size: 2 cups soup
